Head Chef -Tim Fletcher

Tim Fletcher is a born & bred Bristolian. His interest in cooking developed whilst at University in Sheffield. Upon completion of his Management degree he spent a year at Weymouth College learning the practicalities and skills of catering.

The move to Hollington House near Newbury proved pivotal to his development and a fantastic career foundation. Under the watchful eye of Michelin starred Simon Rogan (L’enclume) he was introduced to the perfections associated with fine dining. He moved with Simon onto Kensington, London to help establish a restaurant at the Milestone Hotel. In the autumn of 1998 he migrated to Australia where he spent twenty enjoyable months working and travelling the East coast.

On his return he worked at the City Café in Bristol before joining a catering employment agency where he experienced many different facets of the industry.

June 2003 saw Tim join the small food manufacturing company Trust Quality Foods as the Research & Development Chef. This managerial role saw him designing products & meals for a variety of prestigious clients. He implemented menus for amongst others Virgin Atlantic Airways, Fortnum & Mason and P&O Ferries.

 

 

 

Sous Chef - Enzo Russo

Enzo grew up in  “Pozzuoli” a fishing village situated in Napoli (south of Italy).
Inspired by his Father, a young Enzo developed his love for food by creating culinary delights with the freshly caught fish from the bay.
He began week-end jobs in local restaurants by the age of 13. His main interest was working with seafood, fish and mushrooms. As soon as he gained his catering school diploma, he went to work in north of Italy, then south of France (Cote d'Azur) following his passion for French cuisine. Later, he travelled to Los Angeles (Beverly Hills) for a year, where he worked for Il Fornaio and Il Pastaio, two of the great Italian restaurants stateside.
Before he decided to settle in Bath, he spent 2 years working in London as a chef and maître d' gaining experience by working both front and back of house.

Enzo brings both Italian & French influences to our canteen, helping to give the Staff & Students an opportunity to try new ingredients, textures and flavours.
